The first is how they show you the price. One quoted percentage for everything is easier to sell and dearer for you, because it hides a buffer covering even the most expensive card. A price split into components looks less simple but is verifiable: you compare the schemes' published interchange tables against what you were charged.
The second is how fast you receive your money and how predictable that is. Settlement within 48 business hours means different planning from settlement in a week.
The third is what happens when something goes wrong. The first chargeback, a terminal down on a Saturday, an unexplained decline on a large order. That is where you find out whether there is a person at the other end.

Interchange is the fee that goes to the bank which issued the customer's card. It is published by Visa and Mastercard and depends on the card type: a local debit card is several times cheaper than an American corporate one.
